There is a saying in Italian "l'occhio vuole la sua parte" which translates to the eye needs it's share when eating. This recipe may not lead to the prettiest of cakes, but it sure is tasty. A decadent, rich and gooey chocolate cake with a crisp outer layer that gives way to a fudgy interior. Inspired by the Swedish chocolate cake 'Kladdkaka' this recipe has been lightly adapted and given a Piemontese inspired name which translates to 'ugly but tasty'. Enjoy!

Brüt'i-bon
A decadent, rich and gooey chocolate cake with a crisp outer layer that gives way to a fudgy interior.
Instructions
Pre-heat oven to 180C (gas mark 4). Line the bottom of a cake pan with baking paper and grease.
Melt the butter gently in a pan and then take off the heat
Add in the cocoa, sugar, flour and vanilla extract to the butter and stir a little. Then add in the eggs and stir until it is all well combined.
Pour the mixture into the cake pan and bake in the centre of the oven for around 25 minutes until the top is set but the centre is still gooey.
Let the cake cool in the pan, then turn out onto a plate.
You can add a light dusting of icing sugar (zucchero a velo) alongside a scoop of ice cream when serving

60g (1/2 cup) cocoa powder
350g (1 3/4 cups) sugar
120g (1 cup) plain flour
1 tsp vanilla extract
3 eggs lightly whisked
